Rattan cane bannetons are the natural materials alternative to our 3D Printed Banneton but they work in the same way. Case does have the ability to better absorb and wick away moisture from the surface of the bread which gives an additional 10-15% of time before the dough will stick to the banneton. It is however a common misconception among amateur bakers that proofing should be long, even overnight. However the wetter the dough the shorter proofing time should be - overnight proofing will almost always result in over-proofed loaves that come out denser than what is optimal.
The trade-offs with rattan vs 3D-printed are firstly cost, secondly not being to able to wash them you will need to ensure they are kept very dry to prevent mold formation. Also if a dough does stick there is no easy way to clean them - you will need to allow the dough to dry out and the try to scrape them out without damaging the banneton. With the 3D Printed banneton you are able to wash them in cold water and use cook & spray as an alternative technique for proofing.
The round banneton can handle up to 1.4kg dough and the oval up to 1.3kg.
