A "couche" is the French term for a thick linen cloth used to prove baguettes (or other shapes) separated by ridges made with the cloth.  We've been lucky to source a new supplier that uses a stiffer flax linen material that is traditionally used in France.  Coat in a layer of flour before placing your dough in the cloth.

We have two sizes available.

Amazing proving cloth!

I really am enjoying my proving cloth! The material is thick but not to thick and it is quite large so you can use it over 2 bowls of dough if it warm. If it is cold you can wrap it around your bowl of dough to keep it warm and allow for it to prove very nicely.

How did I work without this?

Working with a couche is so much easier than not. Great for holding the shape while resting rise
